A Month of Thanks: Thanksgiving Day Foraging

Since we had the family around for our Thanksgiving meal last weekend, we just relaxed on American Thanksgiving day at my in-laws’ in the Borders.  The weather was changeable, but we went on two beautiful walks into town and then around the fields nearby.

On our first walk, I spotted rose hips and Honey spotted crab apples so we picked a nice bowlful.

We made apple crumble for dinner and rose hip syrup over the weekend! I have just noticed that although the crab apples were green, they turned pink-ish when cooked.

I am thankful for: a lovely weekend; the quiet and calm time we spent; the laughter we shared; the animals we snuggled with, the sunshine; the space, and the foraging gifts we received.
