Carrot Juice

You know how they say ‘carrot juice is a revelation’? No? Well…it is. About a year and a half ago, my old flatmate’s partner gave me her juicer. I used it on the apple harvest and was then too worried I’d break it on anything harder. She said it could handle carrots and that had been why she purchased it. I hadn’t used it in ages so I thought if I broke it on carrots, I wouldn’t be missing out on much. Well, the juicer handled the carrots fine. And me? Wow, I handled the carrots enthusiastically once I tasted that sweet, earthy juice!

Carrot Juice

When I make carrot juice, I just want to gobble fields and fields of carrots! The juice is all the perfect sweet depth that you get when eating carrots, but delivered more efficiently to your taste buds! Plus, it’s great for Vitamin A and Beta Carotene! YUM!

Since carrots are the freshest when first brought home, I am thinking about juicing loads at the beginning of the week (somehow showing restraint) and freezing it in serving-sized portions.

    • Yes, I was surprised at how pink-ish the orange was! I would say that I’ve only had it about 2 times a week for the past three weeks or so…but hopefully freezing it will let me drink it more regularly. Honey and I already cook a lot with carrots so I can’t drink our whole week’s supply. I can’t say I’ve noticed an improvement, but my eyes were pretty decent to start with and I haven’t paid much attention. Did you notice an improvement?

      • I don’t drink it much, because it kind of goes through me a little too fast, if you know what I mean. I do eat a lot of carrots though, I like to crunch them raw. I believe they genuinely do help your eyesight, but how many you have to eat I don’t know.
