In the beginning of September, when I delivered a large zucchini to the neighbour across the street, he told me to come through and pick rose hips. Honey came across as well and the four of us stood chatting in their backyard, picking the spheres.
Last time I made rose hip syrup, I used sugar but wanted to use honey this time around. It worked fine!
I chopped the rose hips in the food processor, simmered them with a bit of water until they broke down, strained it through a muslin cloth, then simmered again with enough honey to sweeten it until it thickened up. Perfect! I have been drinking it drizzled in hot water to boost vitamin C levels as we head into the autumn.
